IN lends buttery release tonight

From foie gras to junk food, you never know what you’re going to get from IN, a Buffalo foodie industry night at Seabar, 475 Ellicott St., Buffalo.
Tonight, however, the featured ingredient is a nice offshoot of something we use in routine cooking: butter (you know, until the French bastardized it with the creation of margarine in the mid-1800s). The high-end butter bash—actually named “INsatiate”—is free of charge, includes samples, insight and friendly competitions, and runs from 9 p.m. to midnight.
Don’t fret—you won’t have to simply slurp on different kinds of butter, because frankly, that’s a tad troubling. Fortunately, the folks from East Aurora’s trendy (and delightfully locally-sourcing) Elm Street Bakery, 72 Elm St., will provide bread baked in their wood-fired brick oven.
According to IN founder Christa Glennie Seychew, six different butters will be tasted, including spreads from Italy, Ireland and all over the US. Kerrygold, Delitia and Plugra are a few of the names, and their flavors vary from “fragrant, clean and delicate” to “rich and luxurious.”
If you want to get super nerdy, Nibble.com produced a seven-page glossary of butter-related terms, so if you want to impress local food professionals, start dropping terms like “ghee,” “clabber cream” or “tocopherol.” Warning: you might receive a few weird looks.
How many opportunities do you get to attend a butter-themed event? Not many, though the Erie County Fair deep-fried butter doesn’t quite count.
