‘IN’ love with maple madness

Another Monday, another industry night like no other.

IN,” hosted by Feed Your Soul’s Christa Glennie Seychew, is an industry night open to the public with a focus on certain specialties and unique offerings from week to week.  Attendees will get a chance to hang out and meet with industry people including foodies, chefs, bloggers and other food lovers.

This 21+ event is held in the contemporary room at Sea Bar and features free tastings, special guest appearances and friendly competitions.This week’s featured item is maple—highlighting the area as a top producer of the delightfully delicious and savory treat.

All samples are free (but limited) so arrive early for a chance to try all that’s offered. Here is what’s in store for the next “IN,” to be held from 9 p.m. to 12 a.m. on Monday, March 4. All descriptions are from the “IN” Facebook event page.

Country Ham Biscuit—Slices of ham from IN regular Rick Criden will be served on fresh buttermilk maple biscuits with housemade maple mustard from the kitchen of Chef James Roberts at Park Country Club. Served with a side of Brooklyn Brine’s famous Maple Bourbon Pickles, courtesy of our friends at KegWorks.

Chicken and Waffles—Chef Ed Forster of Mike A’s @ Hotel Lafayette shares his interpretation of the classic American dish, featuring pheasant with maple waffle panna cotta, thyme en chemise, and crystallized maple.

Maple Bacon Donuts—Fresh rings of spice cake topped with maple frosting and crisp Applewood bacon from Paula’s Donuts, WNY’s best donut producer.
